Easy Oven Roasted Potatoes

Serving Size: 4 servings

Calories: Approximately 200 per serving

Ingredients:

  • 2 pounds potatoes (red-skinned, russets, or Yukon gold)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary or thyme (dried or fresh)
  • Salt and freshly cracked black pepper, to taste
  • Optional garnish: fresh parsley

Directions:

  1. Preheat Oven: Preheat the oven to 425°F (218°C).
  2. Prepare Potatoes: Wash potatoes thoroughly and cut into 1-inch cubes. If time permits, soak the cut potatoes in cold water for 15-20 minutes to remove excess starch, then drain and pat dry.
  3. Season Potatoes: In a large bowl, toss the potato cubes with olive oil, garlic powder, rosemary or thyme, salt, and pepper until evenly coated.
  4. Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.
  5. Roast: Bake in the preheated oven for 35-40 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the outside and tender on the inside.
  6. Serve: Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Sweetcorn Salad

Serving Size: 8 servings

Prep Time: 8 minutes

Total Time: 8 minutes

Ingredients:

  • 2 x 200g tins sweetcorn
  • ½ orange pepper
  • 100 g cucumber
  • 100 g baby plum tomatoes
  • 2 spring onions

For the dressing:

  • 1 Tbsp lime juice
  • 1 Tbsp olive oil
  • 2 tsp honey

Instructions

  • Prepare the vegetables: drain and rinse the sweetcorn, de-seed and finely cube the pepper, finely cube the cucumber, ¼ the tomatoes, trim and chop the spring onions.
  • Place all the vegetables in a large bowl and mix together until well combined.
  • Place the dressing ingredients in a small bowl or glass and whisk until combined.
  • Drizzle the dressing over the salad and mix again to coat the vegetables.
  • Cover and pop in the fridge until ready to serve.
