Baked Feta Pasta

Ingredients

  • pints cherry or grape tomatoes
  • ¼ cup extra virgin olive oil
  • Salt and freshly cracked black pepper, to taste
  • 1 (8-ounce) block of feta cheese
  • 10 ounces pasta of choice
  • 2 cloves garlic, minced
  • ¼ cup fresh basil leaves, chopped

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C).
  2. Prepare Tomatoes: In a baking dish, combine the cherry tomatoes with olive oil, salt, and pepper.
  3. Toss until well coated.
  4. Add Feta: Place the block of feta cheese in the center of the tomatoes, turning it to coat with oil and seasoning.
  5. Bake: Bake in the preheated oven for 35 minutes, or until the tomatoes burst and the feta is softened.
  6. Cook Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions.
  7. Reserve some pasta water before draining.
  8. Combine Ingredients: Remove the baking dish from the oven.
  9. Add minced garlic and fresh basil to the baked feta and tomatoes.
  10. Stir to combine, creating a creamy sauce.
  11. Mix with Pasta: Add the cooked pasta to the baking dish, tossing to coat. If needed, add reserved pasta water to achieve desired consistency.
Serve: Garnish with additional fresh basil and serve warm.
