Ingredients
- 2 pounds potatoes (red-skinned, russets, or Yukon gold)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon rosemary or thyme (dried or fresh)
- Salt and freshly cracked black pepper, to taste
- Optional garnish: fresh parsley
Instructions
- Preheat Oven: Preheat the oven to 425°F (218°C).
- Prepare Potatoes: Wash potatoes thoroughly and cut into 1-inch cubes. If time permits, soak the cut potatoes in cold water for 15-20 minutes to remove excess starch, then drain and pat dry.
- Season Potatoes: In a large bowl, toss the potato cubes with olive oil, garlic powder, rosemary or thyme, salt, and pepper until evenly coated.
- Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased.
- Roast: Bake in the preheated oven for 35-40 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the outside and tender on the inside.
- Serve: Remove from the oven, garnish with fresh parsley if desired, and serve warm.
