Tater Tot Casserole with Veggies

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 10 ¾ ounces cream of mushroom soup
  • ¼ cup milk
  • 8 to 10 ounces frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 16 ounces tater tots

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Cook Beef and Onions: In a skillet, brown the ground beef with the chopped onions until the beef is fully cooked. Drain thoroughly and transfer the mixture to the bottom of a 2-quart casserole dish.
  3. Prepare Sauce: In a bowl, mix together the cream of mushroom soup and milk until well combined.
  4. Pour this mixture over the ground beef in the casserole dish.
  5. Add Vegetables: Evenly sprinkle 2 to 3 cups of frozen mixed vegetables over the beef and soup layer.
  6. Layer Cheese and Tater Tots: Sprinkle half a cup of shredded cheddar cheese over the vegetables. Arrange the tater tots on top in a single layer. Finally, sprinkle the remaining cheese over the tater tots.
  7. Bake: Place the casserole in the preheated oven and bake, uncovered, for 45 to 50 minutes, or until the tater tots are crunchy and golden brown.
